I love soup! While it is not quite soup season I made this last week and was reminded of how much we all love it! So easy and so good!
This is a recipe from Griffins Mom.... It is tasty and healthy! I serve it with a green salad with avocado and tortilla chips!
Ingredients:
2 tablespoons olive oil
1 1/4 chopped white onion
4 large garlic cloves
1 1/5 teaspoon dried thyme
3 15oz cans black beans drained
2 14oz cans chicken broth
1 28oz can dices tomatoes
2 teaspoons cumin
Toppings: sour cream and cilantro
Sauté onions, garlic and thyme. About 7 minutes.... Add everything else and simmer for 20 minutes. This is the tricky part... You can either use a blender or cuisinart. But ladle the soup and blend and add back to pot. You don't have to blend the whole pot of soup just some of it. Mashing the beans helps to give the soup a thicker consistency. If you have an immersion blender that would work best!
This makes a ton of soup and is even better the next day!
