Sorry for the delay in blogging... We are at the beach and I didn't bring my camera cord to upload pictures. Not to worry though.... There will be plenty of beach posts when we get back! In the meantime I made this pasta one night for dinner and it was soooo good. I thought I would share.... It is in the Junior League of Chattanooga Cookbook. Enjoy!
4 large fresh tomatoes, chopped into 1 inch pieces
1 cup chopped fresh basil
3 cloves fresh minced garlic
1 cup extra virgin olive oil
1 pound of Brie, cut into pieces (rind removed)
Salt and freshly cracked pepper to taste
1 package of linguine, cooked according to box directions
Freshly grated parmesan cheese
Marinate tomatoes, basil, Brie and garlic in olive oil and salt and pepper in a large pasta bowl. Let it sit for 2-4 hours at room temperature. Cook pasta and when cooked al dente put hot pasta over tomato mixture,top with fresh Parmesan and more basil, salt and pepper and toss to coat. Serve immediately!
